2 cups squash, cooked
2 eggs, beaten
1 cup milk
1 cup Ritz cracker crumbs
4 Tablespoons butter or margarine
1/2 cup onions, chopped
1/4 cup green pepper
1/4 tsp. salt
1/8 tsp. pepper
Ritz cracker crumbs for topping
Butter
Paprika

Directions:
Directions:
Cook squash and drain well. Heat milk and butter. When butter is melted, add beaten eggs, onions, green pepper, salt and pepper; then add 1 cup cracker crumbs. Add squash. Pour into well-greased casserole. Top with additional cracker crumbs, dot with butter, and sprinkle with paprika. Bake @ 350º
for 30 minutes.
