4 lg portabella caps
1/4 tsp each salt and pepper
1 cup part skim ricotta cheese
1 cup spinach (finely chopped)
1/2 cup parmesan cheese (shredded)
2 tbsp kalamata olives (finely chopped)
1/2 tsp italian seasoning
3/4 cup marinara sauce

1. preheat oven to 450 and spray cooking sheet
2. place mushrooms gill side up, sprinkle with salt and 1/2 the pepper, roast 20-25 min until tender
3. mash ricotta, spinach, 1/4 cup parmesan, olives, rest of pepper, and seasoning
4. microwave marinara until hot
5. pour any liquid out of caps and return to sheet, spread each with 1 tbsp marinara and fill with ricotta mixture, sprinkle rest of parmesan on top
6. bake 10 min and serve with remaining marinara
