1/2 large onion (chopped)
2 ribs celery (chopped)
14 1/2 oz can diced tomatoes with green chiles
1 tbsp fresh thyme
1 tsp Creole seasoning
8 oz frozen cooked shrimp
salt and pepper

1. in a medium saucepan, combine all ingredients except shrimp and cook until veggies are tender, approx. 10 min
2. add shrimp and cook until heated through, about 2 more min
3. add salt and pepper to taste
