1 T. butter, divided
1 c. cottage cheese
2 c. milk
1 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. black pepper, freshly grated
1/2 lb. elbow macaroni, uncooked. (2 cups)
1 lb. sharp cheddar cheese, grated
Pinch of cayenne pepper and freshly grated nutmeg

Preheat oven to 375º with rack in upper third.
Use 1 T. butter to coat a 9 inch round or square baking dish. In a blender, puree cottage cheese, milk, mustard, cayenne, nutmeg, salt, and black pepper.
In a large bowl, combine all cheddar cheese except 1/4 to 1/2 c., milk mix, and uncooked pasta.
Pour into baking dish and cover tightly with aluminum foil and bake 30 min.
Uncover and stir gently. Sprinkle with remaining cheese and dot with 1 T. butter.
Bake uncovered 30 min.
Remove and cool for 15 minutes and serve.
