4 large baking potatoes (8-10oz. each)
1/4 to 1/2 c. milk
1/4 c. butter or margarine, softened
1/4 tsp. salt
dash of pepper
1 c. shredded cheddar cheese
1 T. chopped fresh chives

Directions:
Directions:
Heat oven to 375º F. Gently scrub potatoes, but do not peel. Pierce potatoes several times with fork to allow steam to escape while potatoes bake. Bake 1 hour until potatoes are tender when pierced with a fork.
When potatoes are cool enough to handle, cut in half, scoop out insides leaving a thin shell. Mash potatoes in med bowl on low speed until there are no lumps. Add milk in small amounts beating after each addition.
Add butter, salt and pepper, beat vigorously until potatoes are light and fluffy. Stir in cheese and chives. Fill shells w/ mixture. Place on cookie sheet.
Increase oven temp 400º F. Bake 20 minutes until golden on top.
