4 (5-oz.) skinless boneless chicken breasts
2 t. Mexican or taco seasoning
1/4 t. salt
1/4 t. black pepper
12 (6-inch) corn tortillas, warmed
1 large tomato, diced
1 Hass avocado, halved, pitted, peeled, and diced
1 small onion, thinly sliced
1/2 c. coarsely chopped fresh cilantro
1/2 c. sour cream

Directions:

Sprinkle the chicken with Mexican seasoning, salt, and pepper. Spray a ridged grill pan (George Foreman works great!) with nonstick spray and set over medium heat. Place the chicken in the pan and cook until browned and cooked through, about 6 minutes per side. When cool enough to handle, tear the chicken into long, thin strips.

Top each tortilla with some chicken, tomato, avocado, onion, cilantro, and sour cream. Fold tortillas in half.
