1/3 c. Sugar
1-1/2 c. Flour
3/4 c. Cocoa Powder
1/2 tsp. Baking Soda
1/4 plus 1/8 tsp. Table Salt
1/2 c. Dark Corn Syrup
1 Large Egg White
1 tsp. Vanilla Extract
12 T. softened unsalted Butter
1/3 c. Brown Sugar
4-oz. Bittersweet Chocolate, chopped
24 Caramels

Yields 16-24 Cookies

Whisk flour, cocoa powder, table salt and baking soda together in a small bowl, set aside.

In another bowl whisk together corn syrup, egg white and vanilla.

Beat butter, brown sugar, and sugar until light and fluffy. Add the corn syrup mixture and beat until just combined. Add flour mixture and chopped chocolate and mix until just combined.

Chill the dough for 30 minutes.

Preheat the oven to 375 and line two baking sheets with parchment paper.

Roll dough into balls and place about 2 inches apart on the lined baking sheet. Bake for 5 minutes and then remove from oven, top each cookie with a caramel chew and sea salt to taste, continue baking another 5-7 minutes until cookie is done and caramel has melted.

Allow cookies to cool 5 minutes before moving to a wire rack for full cooling.
