1 lb. nuts (walnuts, pecans, almonds, cashews, etc.)
1 egg white
1 T. water
1/4 c. Splenda brown sugar blend, packed (substitute 1/2 c. regular brown sugar, packed)
1 T. ground cinnamon
1 tsp. ground ginger
1 tsp. salt (use less if nuts are already salted)
1/2 tsp. ground coriander
1/4 tsp. ground allspice
1 large pinch ground cayenne pepper (or to taste)
1/4 tsp. nutmeg
1/4 tsp. ground cloves

Preheat oven to 250º.

In a medium bowl, whisk egg white and water until frothy. Add nuts and stir to coat completely.

In a one gallon Ziploc plastic bag, combine remaining ingredients. Close bag and shake vigorously to blend, using your hands to break up any clumps. Add nuts and shake to coat thoroughly.

Spread nuts on a large non-stick baking sheet with sides, or one sprayed with cooking spray.

Bake, stirring and smoothing nuts into a single layer every 15 minutes. Bake until nuts are caramelized, about 45 minutes.

Allow nuts to cool before storing in an airtight container.

If made with Splenda, these are actually good for you.

Use your favorite nuts or mix up any combination.

Put in a pretty jar, add a ribbon and give as a gift.
