1 Butternut squash
1/2 cup shredded carrots
1/2 cup finely chopped onion
Olive oil
1 15 oz can chicken broth
1 quart light cream
Ground nutmeg and/or cinnamon

Directions:
I really don't have a recipe.
Prepare squash - peel and "chunk" and cook in dutch oven on top of stove in a little water. Mash to a uniform consistency.
In separate pan saute carrots and onions in a little olive oil.
When squash is ready add chicken stock and combine. Add carrots and onions, stir.
Add light cream (may not need all the cream) and combine.
Sprinkle with nutmeg and/or cinnamon to your taste.
Heat through.
