Read through all three parts of this mouth-watering, custardy cake before you begin.

Part I
2 squares baking chocolate melted in double boiler. Add 1 c. brown sugar, blend, then add 1/2 c. milk with 1 egg yolk beaten in. Cook until thick, then cool.

Part II
1/2 c. butter creamed with 1 c. brown sugar, until fluffy. Add 2 egg yolks, one at a time, beat hard. Add gradually 1/2 c. strong coffee, 1 c. flour, 1 tsp. vanilla, and the chocolate custard, then 1 tsp. (scant) baking soda dissolved in a little hot water.
Add 1 c. flour alternately with the whites of 2 eggs beaten stiff.
Bake in three layers, in prepared pans.
350º for 20 to 25 minutes.

Part III
Frosting
2 c. sugar, 1/4 tsp. cream of tartar, 1 tsp. corn starch, 1 c. water, mix, and cook to 238º on a candy thermometer, or until you can spin a thread.
A thread will appear between spoon and mixture when the spoon is lifted and turned. Add to 3 egg whites beaten stiff. Add a dash of vanilla, almond or rose water, fold into frosting.
