1 c. cooked lean ham, diced
1 c. canned refried black beans
1 c. canned black beans, drained and rinsed
4 medium whole wheat tortillas, warmed
1/2 c. black bean dip
2 T. cilantro, fresh, chopped
1/4 c. shredded cheddar cheese, or Monterey Jack
2 medium scallions, chopped
cooking spray

Directions:

Coat a nonstick skillet with cooking spray and place over high heat. Add ham and sauté until browned and crispy on edges, about 3 minutes. Reduce heat to medium-low, stir in both beans and cook until hot, about 3 minutes. Place tortilla on a dinner plate. Top with 1/2 cup of beans, 2 tablespoons of dip, 1/2 tablespoon of cilantro, 1 tablespoon of cheese, and 1/4 of the scallions. Fold in sides of tortilla, roll up and repeat with remaining ingredients.
