1 cup uncooked rice
2½ cups water
2 cups milk
½ cup sugar
¼ tsp. salt
1 cup raisins
½ cup milk
1 egg beaten
1 tbsp. butter
½ tsp. vanilla

Directions:
Directions:
In a large saucepan, bring water to a boil; add rice, cover, lower heat and cook for 20 – 25 minutes. Add 2 cups of milk plus the sugar & salt. Cook over medium heat, stirring occasionally until thick, 15 to 20 minutes. Combine ½ cup milk & beaten egg. Spoon some of hot pudding in to warm up the egg mixture. Add egg mixture to pudding. Add raisins and cook another 2 minutes. Add butter and vanilla. Remove from heat. Serve warm or cold. Sprinkle with nutmeg.
