Three cups flour
Two cups sugar
One cup salad oil
Three eggs
One teaspoon baking soda
One teaspoon salt
Two teaspoons vanilla

Three cups diced, peeled cooking apples (three medium)
One cup chopped walnuts
1/2 cup chopped dark seedless raisins or dates

Powdered sugar, if desired

Directions:
Directions:
Preheat oven to 325.
Grease well and flour two 8 inch square cake pans, or one 9x13 pan.
Into large bowl, measure flour and next six ingredients; with mixer at low speed, beat until well mixed, constantly scraping bowl with rubber scraper. Beat three minutes more, occasionally scraping bowl.
With spoon, or rubber scraper, stir in apples, nuts and raisins; spread batter evenly into pans.
Bake one hour or until cake is golden brown.
Cool cake in pan on wire racks for ten minutes.
Remove from pan and cool completely on wire rack.
Wrap and refrigerate.
**When you make this cake, it looks as if you forgot something until you add the apples. After the apples are added, it looks like cake batter.
Can be prepared up to one week ahead.
