Bottom layer -
3 tbsp butter
3/4 cup graham cracker,crushed
1 tbsp brown sugar

Filling -
12 oz. cream cheese
1/3 cup skim evaporated milk
3/4 cup brown sugar,packed
1 1/2 tbsp flour
1 tsp vanilla
1/4 tsp maple flavoring
3 eggs

Bottom layer -
Melt butter in saucepan. Stir in graham crumbs and brown sugar. Pack into ungreased 7 inch springform pan. Bake in 350 oven for 10 minutes.

Filling -
Combine first 6 ingredients in bowl. Beat until smooth
Beat in eggs,one at a time,beating only until blended. Pour over bottom layer.

Bake in 350 oven for 50 to 55 minutes until almost set in center. Run knife around top edge to allow cake to settle evenly. Chill into 8 medium wedges
