1 eggplant
1 red pepper, sliced
1 yellow pepper, sliced
2 onions, quartered
2 - 3 tomatoes, quartered
2 small zucchini, sliced
2 cups other veggies (mushrooms, squash, celery)
3 tbsp. olive oil
dried or fresh oregano
kosher salt
fresh cracked pepper
grated parmesan

Directions:
Directions:
Heat oven to 400º. Place the veggies in a large bowl. Add the olive oil, salt & pepper and toss to coat. Place on a rimmed baking sheet. Roast for 20 minutes or until vegetables are lightly browned, stirring occasionally. Remove the baking sheet from the oven. Sprinkle with oregano. Roast for 5 more minutes. Serve with fresh grated parmesan. Experiment with the veggies you like best.
