1 tbsp. olive oil
1 tbsp, butter
4 cups chopped broccoli /asparagus
1 cup chopped onion
3 - 4 cups chicken broth
3 tbsp. butter
3 tbsp. flour
3 cups milk or cream for desired thickness
salt and pepper

Directions:
Directions:
In large saucepan, heat oil and add broccoli and onions. Mix and stir for 4-5 minutes on medium heat. Add 3 cups broth and bring to a boil. Reduce heat and simmer until tender, about 5 minutes. Let cool slightly and puree in blender in small batches. Set aside. Over medium-low heat, melt butter, add flour and stir until smooth. Gradually add milk/cream, stirring constantly. Add pureed broccoli. Salt and pepper to taste. Add additional broth if required. Serve hot with croutons.
