1 egg
1/4 cup fine bread crumbs
1/2 cup grated Parmesan cheese, divided
4 boneless, skinless chicken breast halves
flour
2 Tablespoons oil
1 jar marinara sauce
few sprigs of fresh parsley, chopped
1/4 teaspoon hot pepper sauce or more if you like
3/4 pound zucchini, about 2 cups, sliced
4 ounces shredded mozzarella cheese
Hot cooked pasta

Directions:
Directions:
Mix bread crumbs and 1/4 cup Parmesan cheese. Coat chicken pieces with flour, dip into egg and coat with crumb mixture. Heat oil in large skillet. Add chicken and brown on both sides over medium heat. Mix marinara, parsley and hot pepper sauce. Spoon half of sauce over chicken. Arrange zucchini slices over chicken. Sprinkle with mozzarella and remaining Parmesan. Top with remaining sauce. Cover and bring to a boil. Reduce heat and simmer 25 minutes or until chicken is tender. Serve with pasta.
