½ lb fettuccine cooked and drained
4 tbsp butter
3 tbsp flour
3 cups milk
½ cup grated cheese
½ tsp fresh basil
¼ tsp each salt and pepper
3 boneless skinless chicken breasts (cut in cubes)
1 tbsp olive oil
¼ cup diced onion
4 cups diced fresh veggies (broccoli, mushrooms, peppers, celery)

Directions:
Directions:
In a saucepan, melt 2 tbsp. of the butter; stir in flour and cook for 2 minutes or until bubbly. Remove from heat, add milk and cook over medium heat until smooth and thickened, stirring constantly. Stir in ½ cup cheese and basil, salt and pepper. Set sauce aside.

In a large saucepan or wok, heat remaining butter and oil. Add chicken and stir-fry over medium heat until cooked through, about 3 minutes. Stir into sauce. In same saucepan over medium heat, cook onion until softened. Add vegetables and stir-fry until tender-crisp, about 5 minutes. Stir into sauce. Return sauce to stove and heat through. Add seasonings to taste.

Place hot cooked pasta is serving bowl and pour sauce over; toss to coat pasta evenly. Serve and sprinkle with fresh parmesan.
