1 cup boiling water
1¼ cups pitted dates
1 tsp. baking soda
1¼ - 1½ cup flour
1 tsp. baking powder
Pinch salt
⅓ cup butter
½ cup sugar
2 large eggs
1 tsp. vanilla
-- Toffee Sauce --
1 cup heavy cream
¾ cup brown sugar
4 tbsp. butter

Directions:
Directions:
Pour water over dates, add baking soda. Let stand until dates soften. Preheat oven to 350º. Grease and flour bundt or tube pan (or large 8"'x12" baking dish). Combine flour, baking powder and salt. In a large bowl, mix butter, sugar & eggs. Add in flour mixture, then dates and vanilla. Stir and pour into pan. Bake for 30-33 minutes.

Toffee Sauce: Bring cream and brown sugar to a boil. Add butter and boil 3 minutes. Using a fork, poke holes in surface of pudding so sauce sinks in evenly. Drizzle sauce over pudding. Serve remaining sauce with warm pudding.
