1 turkey breast half (4 lb. boneless)
5 strips of bacon
1/2 c. chopped onion
3 T. flour
3/4 tsp. dried tarragon
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
1 (10 oz.) frozen spinach, thawed and squeezed dry
1 c. sliced mushrooms
1/4 c. Velveeta
1 1/8 T. margarine, melted

Open the turkey breast so that it lies flat. Cover with plastic and flatten to 1/2 thickness. Remove plastic and set aside. Cook 2 slices of bacon; reserve 2 T. of drippings. Crumble the bacon and set aside. Saute onion in bacon drippings, and gradually stir in flour, tarragon, salt and pepper. Gradually stir in milk and bring to a boil; cook for 2 minutes. Remove from heat and refrigerate 1/2 c. of sauce. Add the spinach, mushrooms and bacon to remaining sauce and spread over turkey. Start at the end and roll up and tuck in the ends, and tie with kitchen string. Place on rack in greased pan, brush with butter and cover with foil. Bake at 350ºF for 1 hour. Remove foil and cut the remaining slices of bacon in half; place over turkey. Bake 25-35 minutes longer; discard string. Let turkey stand for 10 minutes and slice. Meanwhile, heat the reserved sauce and stir in cheese until melted. Serve with turkey. Serves 6-8.
