Ingredients: 5 Medium Baking Potatoes 1 lb. Boneless Skinless Chicken Breast (cut into small pieces) 1 c. fresh mushrooms (sliced) 1 sm. Onion chopped 1/2 Green Pepper chopped 1 10 oz. can campbell's 97% Fat Free Cream of Mushroom soup 1/2 c. Fat Free Sour Cream 1/4 tsp. Garlic Powder Salt & Pepper to taste

Directions:Preheat oven to 425º. Bake potatoes at 425º about 1 hour or until done. Cook on rack until cool enough to handle. Slice each potato in half lengthwise & remove some potato from center. Leave enough around edges so potato will keep its shape. Brown chicken pieces in skillet sprayed with nonstick cooking spray. Add mushrooms, onion & green pepper & brown. Drain off excess liquid. Add mushroom soup, sour cream, garlic powder, salt & pepper. Stir until mixed thoroughly. Spoon into potato halves. Place stuffed potatoes on baking sheet sprayed with nonstick cooking spray. Bake at 350º for 25-30 minutes. Save potato centers to mash or make potato cubes for another meal. |
