1 1.2 c. Unsalted butter (softened)
1 c. granulated sugar
1 c. packed brown sugar
1 tbsp. vanilla. 2 eggs
1 3/4 c. all-purpose flour
2 tsp. baking soda
1 tsp. kosher salt
2 c. semisweet chocolate chips
3/4 c. chopped pecans
50 rolos (frozen for at least 2 hours)

Heat oven to 350º. In large bowl, beat butter, sugars, vanilla & eggs with electric mixer on medium speed or with a spoon until light & fluffy. Mix in flour, baking soda & salt. Mix in chocolate chips & pecans. Measure dough using a medium cookie scoop (about 1 1/2 tbsp). Roll into a ball & then flatten in the palm of your hand. Place a frozen rolo in the center of the flatten dough balls & form dough back into a ball around the rolo. Place rolo stuffed dough ball into the freezer for 15-20 minutes before baking. On cookie sheet lined with parchment paper place dough ball 2 inches apart. Bake for 11 to 13 minutes or until light brown (centers will be soft). Cool 2 minutes & remove from cookie sheet to cooling rack.
