3 eggs
2 c. Sugar
1 1/2 c. Salad Oil
3 c. Flour
2 tsp. Soda
1 lg. can Crushed Pineapple
1/4 tsp. Salt
2 tsp. Cinnamon
1 tsp. Vanilla
2 c. Grated Raw Carrots
1 c. Pecans
1 c. Golden Raisins (Yellow)

Cream Cheese Icing:
1 pkg Cream Cheese
1/2 stick Real Butter
1/2 bag Powdered Sugar
1 tsp. vanilla

Directions:
Directions:
Beat eggs, add sugar, & blend until fluffy. Add oil & beat. Sift in dry ingredients & add to sugar mixture. Add vanilla, pineapple, carrots & pecans. Blend. Grease & flour a tube pan. Pour batter in & bake at 350º for 60-75 minutes. You could use a 9x13 inch sheet cake pan & bake for 40 minutes @ 350º. Let cake cool completely & then spread cream cheese icing on top.
