Ingredients:  
1 - 4 or 5 lb. chicken
3 whole stalks celery
2 carrots
1 tsp. salt
Dash Pepper
1 onion
Water
Parsley, optional

Directions:
Directions:
1. Cut up chicken and put in pot.
2. Add water to cover chicken. Bring mixture to a boil and skim off top.
3. Cut onion in half and add to pot.
4. Add cut-up carrots, salt, pepper, celery and parsley to pot.
5. Cook soup slowly until chicken is cooked through, about 2 hours.
6. Let soup cool and refrigerate.
7. Skim fat off top and remove chicken bones.
8. Reheat and serve.
