1 small onion chopped (1/4 cup)
1/4 cup celery
1/4 cup chopped sweet red pepper (or green) or mushrooms
1/2 stick (4 T) butter/margarine
4 oz crab meat or shrimp
1/2 cup breadcrumbs
3 tsp lemon juice
1/2 tsp salt
1/8 tsp pepper
4-4 oz fillets

Directions:
Butter shallow dish. Saute onions, celery, peppers etc. in 2 T butter about 2 min. Mix in crab meat, crumbs, 1 tsp. juice, salt, pepper. Place fillet skin side up, put mound of stuffing in center of fillets-overlap ends over top of stuffing. Fasten with toothpicks.Melt remaining butter, stir in lemon juice, pour over fish, sprinkle with paprika. Bake 350 degrees for 18-20 min. Garnish with lemon wedge and parsley. Serve with herb-seasoned rice.
