½ cup butter
1 cup sugar
1 egg
1 cup buttermilk
1 tsp. vanilla
2 cups flour
½ tsp. salt
1 tsp. baking soda
2 cups cubed rhuharb
1 tsp. flour
- Topping-
1 cup brown sugar
¼ cup butter
2 tsp. cinnamon

Directions:
Directions:
Heat oven to 350º. Grease and flour a 9" x 12" glass baking dish. In a medium bowl, cut the rhubarb in small cubes and toss with 1 tsp. flour; set aside. In another bowl blend the Topping ingredients and set aside.

In a large bowl, cream the butter, egg and sugar; add the buttermilk and vanilla. Mix the flour, salt and soda together and gradually add to the buttermilk mixture. Toss in the prepared rhubarb and blend. Pour mixture into the baking dish. Spread the Topping mixture evenly over the batter. Bake for 30 minutes.
