3 (8 oz) pkg. softened cream cheese
4 eggs
1 c. sugar
1 tsp. vanilla
1 Box vanilla wafers
1 large can cherry pie filling (or your favorite fruit pie filling)
paper cupcake liners

Directions:
Directions:
Preheat oven to 350º. In a large bowl beat softened cream cheese and eggs until smooth. Add sugar and vanilla and blend until smooth. Place paper cupcake liners in cupcake pan. Place one vanilla wafer in the bottom of each cup. Fill each cup 2/3 full with cheese mixture. Bake for 10-13 minutes. When cooled, top each with pie filling.

If you'd like to freeze these for later, don't add the pie filling and freeze in an air tight container. It's best to
remove the cheese cakes from the papers before freezing.
