1 c. tightly packed brown sugar
2 tbsp. all-purpose flour
1/8 tsp. salt
2 c. seedless raisins
2 c. boiling water
3 tbsp. lemon juice
2 tsp. finely grated lemon rind

Directions:
Directions:
Preheat oven to 400ºF. Combine brown sugar, flour and salt in a sauce pan. Add raisins and boiling water. Bring to a boil. Simmer until raisins are plump and mixture starts to thicken, about 10 minutes. Stir constantly. Remove from heat and stir in lemon juice and lemon rind. Cool.
Prepare pastry and line a 9" pie plate with the rolled pastry. Roll out top crust and cut slits in the center. Pour cooled filling into pastry lined pie plate. Moisten the edge. Place top crust in position. Seal and flute the edge. Bake in preheated 400ºF oven for 35 to 45 minutes or until pastry is golden brown.
