1 bag white and yellow corn nacho chips
1 c. shredded Monterey Jack cheese
1 c. shredded medium cheddar cheese
1/2 c. crumbled goat feta
1/4 c. sliced black olives
1/4 c. sliced jalapeños, seeds removed
1/4 c. red and yellow bell peppers, diced
1/2 lb. ground mild Chorizo sausage
1 tsp. salt
1 tsp. pepper
1 clove garlic
1/8 c. shredded white onion
1 tbsp. olive oil
1/8 c. green onion, chopped
Sour cream
Salsa

Directions:
Directions:
Heat oil in sauce pan over medium heat. Add shredded onion and minced garlic and saute until translucent. Add sausage and season with salt and pepper. Brown sausage and cook thoroughly. Preheat over to 325ºF.

Place one layer of mixed chips on baking sheet. Layer with 1/3 ground sausage and cheese blend. Add another layer of chips and add 1/3 sausage, cheese blend, and half of olives, jalapeños and peppers. Add one more layer of chips, sausage, and cheese. Add the rest of the olives, jalapeños and cheese. Bake at 325ºF until cheese is melted throughout, about 7 - 10 minutes. Watch that the chips don't burn. Remove from oven and sprinkle with green onions. Serve with sour cream and salsa.
