About 40 bite sized mushrooms
1 tbsp. butter
2 tsp. all-purpose flour
1/4 c. homo milk
1 tbsp. Miracle Whip
1/2 lemon
2 tbsp. lemon juice
1/2 tsp. cayenne pepper
1/2 tsp. pepper
1/4 tsp. salt
1/4 c. shredded Monterey Jack cheese
1/2 c. crab, membrane removed (can be canned)
1/8 c. sautéed diced red onion
2 tsp. paprika

Directions:
Wash mushrooms and remove stems. Melt butter over low heat in a sauce pan. Stir in flour until smooth. Remove from heat and add milk, lemon juice and Miracle Whip. Heat mixture stirring constantly until it comes to a boil and thickens.

Reduce heat and add cheese, salt pepper and cayenne. After cheese melts, add crab and onion. Fill mushroom caps with stuffing, dust lightly with paprika. Bake at 400ºF for 15 to 20 minutes or until heated through. Let cool about 5 minutes and enjoy.
