2 pkgs. granulated yeast
1/4 c. warm water, 110 - 115 degrees
1 c. milk
1/2 c. sugar
1 tsp. salt
1/2 c. butter
2 eggs, lightly beaten
About 5-6 c. flour
To brush on before baking: egg yolk mixed with cream

Dissolve 2 pkgs. of yeast in warm water.
Scald milk , add sugar, salt and butter.
Cool mixture to lukewarm.
Stir in 3 c. flour to make thick batter.
Add softened yeast and lightly beaten eggs and
beat thoroughly.
Add 2 c. flour, to make a soft but not sticky dough.
Turn dough out on lightly floured board and knead about 5 minutes to smooth and satin.
Place in buttered bowl, cover with a towel and let rise until double in bulk, 1 - 1 1/2 hours.
Punch dough down and let rest for 10 min. before shaping rolls.
For the crescents, divide dough in 3 equal parts, roll each into a 10 inch circle about 1/4 inch thick.
Cut into 8 wedges.
Roll each triangle, loosely from the base to the point, shape to a crescent.
Place on buttered baking sheet 1 inch apart.
Brush with an egg yolk mixed with a little cream.
Bake 425º for about 12 min. until golden.
Cool on racks.
