1 (1/4oz) package yeast
1/3c lukewarm water (about 105 degF- too hot will kill the yeast)
1 1/2T sugar
1/8tsp salt
2c flour
3 eggs
1c melted butter
1tsp vanilla
3/4tsp cinnamon (optional)
1c pearl sugar

Directions:

Mix yeast, water, sugar, and salt in a bowl and let it develop or sit for 15minutes.

Place flour in a separate large mixing bowl and make a well in the center. Pour the yeast mixture into the well and mix until blended on medium speed.

Add eggs one at a time, melted butter a bit at a time, and the vanilla and cinnamon. Be sure to mix well after each addition. Keep in mind the batter will be thick and VERY sticky.

Remove the bowl from the mixer and let the dough rest until it doubles in volume inside the bowl.

Gently fold the pearl sugar and let the dough rest for 15 more minutes

While dough is resting, heat the waffle iron.

Spoon about a 2" ball of dough into the center of the waffle iron and bake 3-5 minutes. These waffles are small but rich!

These waffles are to die for. They are wonderfully rich and sweet, so a little waffle goes a long way! It is difficult to find pearl sugar in the US, so I "crush" sugar cubes in a bag and sift out the finer sugar for a later use. The chunks get measured out and go into the waffles. These waffles are traditionally served with fruit, powdered sugar, or chocolate syrup as toppings. Yum! Note: these also freeze very well!
