Cheese Enchiladas Recipe

1 c. cottage cheese
1 c. shredded Monterey Jack cheese
1 c. chopped tomatoes
1/3 c. chopped onion
1 T. taco seasoning
8-6 inch flour tortillas
1/2 c. salsa
1/2 c. shredded colby cheese

Directions:
Directions:
Mix cottage cheese, Monterey Jack cheese, tomatoes, onion, and taco seasoning and set aside.
Place tortillas in two stacks on plates. Cover with waxed paper and microwave for about 1 minute or until warm and softened.
Spoon about 1/3 c. of the cheese mixture onto each tortilla.
Roll tortillas and place seam sides down in 9x13 casserole.
Pour salsa over enchiladas.
Cover with vented plastic wrap and microwave on 5-6 min, or until hot. (if you do not have a turn table in micro, turn half way thru heating time)
Sprinkle with shredded colby cheese.
Microwave uncovered for 1-2 min or until cheese is melted.
