Directions:Preheat oven to the temp on the hard tacos ( the soft can be heated in the microwave). Have the tacos on the tray ready to pop in the oven just before the meat is done so they are hot when the meat is hot. In a heavy saucepan put the can of chili beans and heat thoroughly on medium heat and then turn to low to keep warm while you make the meat. in a heavy skillet with just enough oil to coat the bottom, sauté the onion and garlic just a minute or two. Do not brown. Add the meat and using a fork keep it separated as it browns. You want a fine mixture. Add one package of the taco mix as the meat is browning to give it flavor. DO NOT OVER COOK the meat. You don't want it crispy just done. Add the water as recommended on the taco seasoning package and the remaining taco package of seasoning. Bring the heat up to simmer the fluid until it is mostly absorbed by the meat. Remove from the heat. I put the meat in the bottom of my shell, then add the beans, onions, lettuce, avocado and taco sauce. can top with sour cream. I serve each in a separate bowl so everyone can make their own taco. |

Notes: We bought a table with a center lazy susan for taco night. That thing spins so fast you cannot always get a turn at getting the trimmings. Taco night was one of our special nights.
