1 c butter
1/3 c heavy cream
2 c flour
sugar
Filling:
1/4 c butter
3/4 powdered sugar
1 egg yolk (I leave this out)
1 tsp vanilla
pink or green food coloring
Directions:
Directions:
Mix butter, cream and flour thoroughly and chill 1 hour. Roll out 1/4 inch thick and cut in 1 1/2 rounds (use the lid of a spice jar). Dip the cookie in sugar and place on an ungreased baking sheet. Pierce each cookie several times with a fork. Bake 8 - 10 minutes at 375º. Whip up the filling. Sandwich filling between two cookies.
