2 tbsp butter
4 cups diced,cooked - Yukon gold potatoes
1 tsp salt
3 eggs,slightly beaten
Paprika
1 cup finely chopped onion
1/2 lb Swiss cheese,grated
1/4 cup flour
1/4 tsp pepper
3/4 cup milk
Directions:
Directions:
In a large bowl,melt butter on high for 1 minute. Add onions,micro cook on high for 2 minutes , stir and micro cok for 1 minute. Grate potatoes using food processor or hand grater.To onions,add potatoes,cheese , flour,salt and pepper,blend well. Combine eggs and milk and add to potato mixture.spoon into 9 inch sq pan. Microwave,uncovered for 5 minutes, then stir and sprinkle with paprika. Mircowave on high for 7 minutes. Let stand covered for 5 minutes. Makes 9 servings.
