Ingredients: Two rectangular sheets of frozen puff pastry 2 tbsp. butter 1 cup cubed frozen hash browns 1 cup pepper sliced 1/2 cup onion diced 1 cup diced ham 11 eggs Fresh chives if available 4 ounces cream cheese 2 tbsp. orange juice 1 egg 1 tbsp. water 1/4 cup shredded Parmesan cheese

Directions:Thaw pastry on parchment paper for 30 minutes.
Melt butter over medium high heat and add potatoes. Saute 5 minutes. Stir in peppers and saute 3 more minutes. Add ham.
Whisk eggs with chives and add to pan. Scramble until set. Season to taste. Set off heat and add cream cheese and orange juice. Refrigerate until dough is ready.
Trim dough with 2 inch slices one inch apart on the diagonal. Fill center strip with 1/2 egg mixture. Fold center section in and braid side sections. Repeat on second pastry piece. Place parchment paper with braided dough on a baking sheet.
Combine 1 egg and the water. Brush egg water mixture on top of dough. Sprinkle with Parmesan cheese. Bake at 400º for 25 to 30 minutes. |

Notes: Peggy first prepared this for the family and it is beautiful and tasty! Can be prepared the night before and baked in the am. Alternative fillings work well for dinners and desserts too. Substitute 1 cup southwest style hash browns if no peppers or onions are on hand.
