½ cup oil (may substitute ¼ cup applesauce)
2 eggs, beaten
1 cup sugar
3 ½ cups rolled oats (not instant)
2 tsp baking powder
½ tsp salt
1 cup cream or evaporated milk (regular milk will work but won’t be quite as
fluffy…)

Directions:
Directions:
Mix oil with eggs and sugar. Stir in oats, baking powder, salt and cream. Mix well.
Pour into 9x9 or pie plate. Bake 350 for 35-40 min. or until edges are browned.
Serve warm topped with fresh fruit and cream or half and half (milk works too).

Favorite toppings are: strawberries, raspberries, peaches, sautéed apples with
cinnamon. I like to use warmed frozen raspberries in the wintertime.
