2 T. melted butter
1/2 C. milk
1 medium onion, chopped
1 C. Minute Rice
5-6 C. coarsely cubed unpeeled zucchini
4 oz. grated cheese
1 can cream of chicken or cream of mushroom soup

Directions:
Directions:
Saute' onion in butter and put into 8x8" baking dish with all other ingredients.* Toss together, cover with foil and bake 30 minutes.* Uncover and sprinkle with cheese; bake 10 minutes longer. Serves 4.
*VARIATION: As a one-dish meal, add 1 pound browned & drained ground beef, 1 or 2 cups precooked roast beef, chicken, or turkey pieces. Increase baking time to 45. minutes.
