2 c. bread crumbs
2 tbsp. grated Parmigiana-Reggiano cheese, plus more for topping
2 large eggs
1/2 c. flour
1/4 tsp. sea salt
1/8 tsp. pepper
8 chicken breasts
extra virgin olive oil
1 lb. mozzarella cheese, cut into 8 slices
16 oz. marinara sauce
Pasta & garlic bread for serving

Preheat oven to 350º. In large bowl, mix bread crumbs and Parmigiana-Reggiano cheese. In a shallow bowl, beat eggs. On a large plate, mix flour, salt and pepper.
Pound chicken breasts to 1/4 inch thickness. Coat evenly with flour, shaking off excess. Dip into egg. Coat evenly with bread crumbs. Set on waxed paper.
In nonstick skillet, heat 1/4 c. of oil to 350º. Place single breast in skillet and saute for 2 minutes on one side and 1 minute on other side. Remove from skillet; drain on paper towel.
Place sautéed chicken in baking dish and cover breast with 1 slice of mozzarella and marinara sauce. Sprinkle with parmigiana - Reggiano. Bake for 10-15 minutes or until the sauce and cheese start to bubble.
Serve with pasta and garlic bread. Add salad and voila - perfect meal!
