Ingredients: Chicken breasts, tenderized 1/2 c butter 3 garlic cloves, minced 1- 3 drops tabasco 2 c breadcrumbs 1 T coarse salt 1 T parsley flakes If you desire them to be stuffed: 1 box stuffing, prepared according to package directions or other stuffing recipe with mushrooms added if you dig them
Honey Dijon Sauce 1/2 c honey 2 c mayonnaise 1/3 c Dijon mustard Mix honey, mustard and mayonnaise together and chill. When chicken is cooked, drizzle sauce over hot chicken and serve.

Directions:Preheat oven to 375º. Melt the butter in a saucepan. Add the garlic and tabasco until just warmed. Remove from heat. Mix the breadcrumbs, salt and parsley flakes. I ask the butcher at the store to tenderize the chicken, if you don't - you will need to pound it to 1/4 inch (in a plastic bag works best). Place one scoop of the prepared stuffing on the center of each chicken breast. Wrap the chicken around it and secure it with a skewer or toothpick. Dip the chicken in the butter mixture and then into the breadcrumb mixture to coat. Place on baking sheet and bake 45 minutes until done. If you do not desire to stuff the chicken then skip the tenderizing step and bake the chicken without the stuffing. |
