1/4 c. butter
1 c. onion, chopped
1 garlic clove, crushed
1 tsp. curry powder
1/2 tsp. salt
1/8 - 1/4 tsp. ground coriander
1/8 tsp. crushed red pepper
3 c. chicken broth
1 (15 oz.) can pure pumpkin (I prefer Libby's)
1 c. half & half
Sour cream and chopped chives (garnish)

In a large sauce pan, melt butter and saute onion and garlic until softened. Add curry, salt, coriander and red pepper. Cook for 1 minute. Add chicken broth and bring to a gentle boil. Continue cooking uncovered for 15-20 minutes. Stir in pumpkin and half & half, and cook for an additional 5 minutes.
Pour soup into blender container. Cover and carefully blend hot soup until creamy. For a smoother texture, strain through a large strainer. Garnish with a dollop of sour cream and chives.**Recipe received from Tina Brannen.**
