2 c. fresh strawberries
1 box sugar-free strawberry Jell-o
1 box SMALL sugar-free, fat-free cook and serve vanilla pudding mix
2 c. cold water

Directions:
The strawberries are the crust. You slice them and line the bottom of the pie plate with them.
In a pan, over medium heat, mix the pudding into the cold water, whisking as you stir; add the strawberry Jell-O powder into the hot pudding mixture until it melts. Pour mixture over strawberries in pie plate and refrigerate until solid.

I put the water in the microwave for 3 minutes and then stir the pudding in nuke for another 2 minutes take out and add the Jell-O. I let it cook a bit and then pour on the berries. I have also used other fruit we did a peach pie like this and hubby loved it too. It’s so easy and so good and we cut it into 6 pieces which give you a bit more and it doesn’t change the point value on it.

This is great with fat-free cool whip.
Each serving counts as 1 point for Weight Watchers.
