5 eggs
11/2 c. unsweetened cocoa
2 1/4 c. white sugar
11/4 c. cake meal
11/4 c. oil
1/2 t. salt
3 T. instant coffee
1 1/2 c. chopped nuts
1 c. chocolate bits

Directions:
Directions:
Heat oven to 325º. Mix cake meal and cocoa, salt and instant coffee together together. In a large bowl beat eggs, add sugar as you are beating and beat until light and lemon colored. Add oil is a slow stream. Add the cake meal mixture. Add half the nuts. Spray a 9x13" pan with Pam lightly. Pour the batter into the pan. Sprinkle the rest of the nuts and the chocolate bits on the top. Bake for 30 -35 minuets until toothpick comes out clean. Do not overbake or the brownies will be cake like. Cool on a wire rack and then cut.

freeze well. This is the recipe I use most. Add some nut and chips to the batter and use the rest on top. Don't overbake.
