3 chicken breasts (cut in half, horizontally)
1/8 olive oil
2 T. butter
1 lg. shallot, minced
1/4 c. flour
1/2 tsp. paprika
Salt and pepper to taste
1/2 c. white wine
1 c. chicken broth
1-2 T. lemon juice

Directions:
Directions:
Dry chicken with paper towel. Add salt, pepper and paprika to flour. Place in shallow dish. Flour chicken and shake off excess. Heat oil and butter in heavy skillet and pan sear chicken 2-3 minutes on each side until lightly browned. Remove, cover with foil and set aside. Saute shallot for 2 minutes. Deglaze with wine. Add chicken broth and lemon juice. Cook down until reduced by half. Return chicken and any juices that have accumulated to pan. Saute on low for about 5 minutes, turning chicken once.
Serve with angel hair and spinach.
