1-3lb. eye of round roast
garlic salt (to taste)
pepper (to taste)

Directions:
Preheat oven to 500º. Season roast with garlic salt and pepper to taste. Reduce oven heat to 475º and cook roast (in casserole dish) for 21 minutes (or 7minutes per pound if you have larger roast). Turn off the oven and leave the roast in for 2 1/2 hours. *Do not open the oven while cooking* This will cook roast to medium rare-medium. If medium well-well is desired, cook at 350º for an additional 5-10 minutes. Carve into thin slices and serve.

Original recipe called for regular salt, but I substituted the garlic salt for more flavor. Also, I note season "to taste" in most recipes, as the amount of spice that I use will likely be higher than most since we live in New Orleans and have spice dulled taste buds! :)
