1 stick margarine
1 C. flour
1 C. eggs (about 4 large or 5 med.)

Filling:
1 box instant vanilla pudding
1/2 pt whipping cream
1 tsp. rum flavoring
small amount of powdered sugar
chocolate chips (if desired)

Preheat oven to 425º.

In a medium saucepan, bring to a boil the water and margarine. Add flour. Stir briskly over heat for about 2 min. until mixture forms a ball. Remove from heat. Beat in eggs one at a time.

On an ungreased baking sheet, form dough into small mounds, or an eclair-shaped oval. Recipe with make 12-13 large, or 30 walnut-sized mounds. These will expand. Bake for about 25 min. (After 15 min. turn oven down to 375º). DO NOT UNDERBAKE.

Remove from oven. Pierce tops to let steam escape. Cool. Cut off top third of each to make a "lid".

Fill éclairs shortly before serving.

Filling: Whip cream until slightly stiff, add a small amount of powdered sugar to sweeten. Mix instant pudding according to box. Add flavoring to pudding. Gently fold whipped cream into pudding.
Fill each puff. Replace lid. Arrange on serving dish, letting sides touch. Sift additional powdered sugar over plate. If desired, drizzle melted chocolate on top.

Éclairs may be filled with ice cream, pudding, fruit, or whipped cream. For a savory filling try creamed seafood or chicken.
