1 C flour
1/4 C whole wheat flour
1/3 C unsweetened cocoa powder
1 1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp ground clove
1/8 tsp ground nutmeg
1 C mashed ripe banana (2)
1/3 C sour cream
1 large egg
1/2 C dark brown sugar
1/4 C canola oil
1 tsp vanilla extract
1/3 C semi-sweet chocolate chips
3-4 T smooth peanut butter

Preheat oven to 350º. In a large bowl, sift together flours, cocoa, baking powder, baking soda, salt, cinnamon, clove, nutmeg. Add back in the bran left in the sieve from the whole wheat flour.
In a separate bowl whisk together mashed bananas and sour cream until smooth. Whisk in the egg, sugar, canola oil and vanilla until well blended. Add the flour mixture and fold gently until just combined. A few streaks of flour should still remain. Fold in chips.
Fill muffin cups of a non-stick pan about 2/3 full. Spoon about 3/4 tsp peanut butter into the center of each cup. Evenly divide the remaining batter on top to cover the peanut butter. Bake until the muffin tops spring back when touched gently, about 18 minutes. Let cool slightly before transferring to a wire rack to cool completely.
