4 boneless chicken breasts, halved
1/2 cup vegetable oil
1 cup flour
3/4 tsp. salt, 1/2 tsp. pepper
3 lg. eggs, whipped
1/2 stick butter
1/2 c. white wine
1/2 c. low sodium chicken broth
3 T. fresh lemon juice
1/4 c. chopped parsley

Directions:
Directions:
Pound chicken to 1/4 inch. Heat oil over medium heat. Mix flour, salt and pepper. Dredge chicken with flour. Shake off flour then dip floured chicken in eggs. Saute chicken in oil about 5-6 minutes total. Remove from pan and keep warm. Wipe skillet clean. Heat butter over low heat until foam subsides. Add wine, broth, lemon juice and boil uncovered until reduced by half, about 6 minutes. Stir in parsley and salt and pepper to taste. Add chicken to sauce and simmer a few minutes.
