1 lb mozzarella curd
Sprinkle Kosher salt
1 Tomatoes
10 C. water
1 C. ice
2 T. EVOO
1 T. Balsamic glaze.
Fresh basil

Directions:
Directions:
Pre-heat 5 C. water to 120*-150*. Put ice into bowl with 5 C. water. In bowl break curd into chunks. Add hot water. Fold with hands till curd is like play dough®. Take handful of cheese curd and squeeze water out with hands. Place in a piece of plastic wrap and tie so cheese is in the shape of a ball. Place in ice water for 3 minutes. Take out tomato and cheese cut both into slices. Place on plate alternating. Drizzle with EVOO and balsamic glaze. Garnish with fresh basil.
